③ DHA 증가: b = - 0.52%; CI - 1.1 to - 0.12; p = 0.021
결론 Our study provides evidence that a substitution diet with KAMUT® khorasan wheat products can reduce some markers associated to the development of type-2 diabetes compared to a diet of modern wheat.

결론 The present results suggest that a replacement diet with Kamut products could be effective in reducing metabolic risk factors, markers of both oxidative stress and inflammatory status.

결론 The present study shows that the ancient organic khorasan wheat has an additive protective effect by further down-regulating several key parameters/markers, including those considered important for secondary prevention of ACS. This protection is not afforded by conventional control wheat.

결론 The release of SCFA and phenol compounds, as well as by a slight increase in health-promoting mutualists of the gut microbiota in comparison to whole durum wheat adopted as a control diet. The high concentration of selenium in Kamut® Khorasan-based foods, these results may contribute to support our previous in vivo findings related to the anti-inflammatory activity and counteraction of oxidative stress

③ 염증전구물질(pro-inflammatory cytokines) 감소
④ IL-6, IL-17, interferon-g, monocyte chemotactic protein-1 and vascular endothelial growth factor
결론 A replacement diet with ancient khorasan wheat consumption provided additive protection in reducing total and LDL cholesterol, insulin, blood glucose, ROS production, and some inflammatory risk factors, which are all key factors warranting of control in secondary prevention of T2DM compared to a diet with products made with modern wheat.
